The Sense of Smell

Smell is the most primitive of the senses, and our response to certain scents is deeply rooted in the subconscious mind.
Olfaction, or the sense of smell, is a chemical process. Unlike hearing and vision, which are stimulated by energy-based phenomena, smell relies on the detection of airborne molecules that come into contact with specialised chemo-receptive cells known as olfactory receptors. This makes the study of smell more complex compared to vision, for instance, which can be analysed through reactions to different wavelengths of the visible spectrum.

When we breathe, air enters the nasal passages, which are divided by a thin septum. The air flows into the nasal cavities above the mouth, separated from it by the palate. These cavities connect to the pharynx. The walls of the nasal cavities are lined with epithelial tissue called the pituitary membrane, which has two parts: the vascularised red membrane that warms the air for the lungs, and the yellow membrane at the roof of the cavities where the olfactory process begins. This yellow membrane is covered in mucosa.
The epithelial tissue of the yellow pituitary membrane consists of supportive receptor cells situated between basal cells.
Olfactory nerves extend upwards from the pituitary membrane to the olfactory bulbs – one located in each cerebral hemisphere. The olfactory bulbs contain structures called glomeruli, where axons connect with dendrites of various neurons, including mitral cells.
Receptor cells are bipolar neurons (with two poles) that transmit the chemical signals they receive.

The olfactory cortex communicates directly with multiple brain regions, including the orbital neocortex, mediodorsal and submedian thalamic nuclei, lateral hypothalamus, and limbic areas such as the amygdala and hippocampus.
Broadly, two types of information are processed: signals to higher olfactory centres related to conscious scent recognition, discrimination, perception, and memory, and signals to limbic structures associated with subconscious responses to scents, influencing emotions, behaviours, and hormonal regulation.
